Food of the gods
It is considered to be the most addictive food on earth. The Mayan and Aztec civilizations of Central America not only consumed it but made it a part of their religious ceremonies. As a form of currency it was valued as much as gold, and only men were permitted to eat it because it was considered too stimulating for women. For more than 28 centuries it has been, and still is, greedily devoured. It is, of course, chocolate.
Throughout most of its history chocolate was known only as a drink. The Spanish, when they arrived in the Americas, found it at first to be most unpleasant, especially as the Aztecs served it mixed with chillies or cornmeal. By the middle of the 16th century the Spanish had discovered that blending it with sugar and drinking it hot made it much more enjoyable.
Once Europeans acquired a taste for the newly discovered beverage, chocolate drinking houses sprang up across France, England and the rest of Europe and from then on chocolate took the world by storm.
A great deal of technology is required to convert the cacao bean into a piece of chocolate. It is not simply a matter of grinding up a few beans and making chocolate fudge. Chocolate has a long history of technological innovation.
One of the earliest processes for turning cacao beans into a soluble powder that could be more easily made into a drink was invented by the Dutch chemist Coenraad van Houten in 1828.
As a result of that development, the world"s first eating chocolate was manufactured by the Fry company in England, in the middle of the 19th century. A few years later Cadbury introduced the world"s first box of chocolates, creating a worldwide demand for the ultimate taste sensation.
In 1876, a Swiss chocolate manufacturer, Daniel Peter, added condensed milk to produce the world"s first milk chocolate. This new form of chocolate was immensely popular and the Swiss went on to develop other techniques for producing even smoother textured chocolate. Today there is, of course, a whole range of chocolates available, from inexpensive mass-produced chocolate bars to very expensive handmade creations. There is a chocolate for all tastes and all budgets.
Cacao is still grown in Central and South American countries but it is West Africa that is the largest producer of cacao, followed by Indonesia. Interestingly though, the finest quality of cacao is still produced in Central America, its place of origin.
The scientific name for the cocoa plant is Theobroma cacao - meaning "food of the gods" - and for many chocoholics it couldn"t be better named. But surely even the most devoted "chocfan" would be hard pressed to believe mixing chocolate and chillies, as the Aztecs once did, could in anyway be thought of as heavenly.
